Tropical Fruit Salad with Pistachios and Honey Lemon Dressing

Tropical fruit, crunchy nuts and a sweet, tangy dressing make for a bright and lovely dish.

Ingredients
  

  • 3 kiwis - peeled and cut into bite size pieces
  • 1 cup pineapple - fresh, cut into bite size pieces
  • 1 cup strawberries - cored and quartered
  • ΒΌ cup pistachios - shelled and roughly chopped
  • 2 tbsp honey
  • 1 tsp lemon juice
  • mint leaves - just a few for garnish

Instructions
 

  • Cut all the fruit and toss together in a serving bowl.
  • Roughly chop pistachios and sprinkle on top of the fruit.
  • Mix together honey and lemon juice until well combined. Poor over fruit and nuts.
  • Gently toss everything together, careful not to smash the fruit.
  • Garnish with mint leaves and serve immediately.
