Tropical Fruit Salad with Pistachios and Honey Lemon Dressing

Tropical fruit, crunchy nuts and a sweet, tangy dressing make for a bright and lovely dish.

- 3 kiwis - peeled and cut into bite size pieces
- 1 cup pineapple - fresh, cut into bite size pieces
- 1 cup strawberries - cored and quartered
- ΒΌ cup pistachios - shelled and roughly chopped
- 2 tbsp honey
- 1 tsp lemon juice
- mint leaves - just a few for garnish
Cut all the fruit and toss together in a serving bowl.
Roughly chop pistachios and sprinkle on top of the fruit.
Mix together honey and lemon juice until well combined. Poor over fruit and nuts.
Gently toss everything together, careful not to smash the fruit.
Garnish with mint leaves and serve immediately.
