Easy Breakfast Scramble
This easy breakfast scramble recipe with avocado and sausage is a good one to get you going in the morning. Protein helps stabilize blood sugar and gives you energy to start your day.
Breakfast is my favorite meal of the day. I have to start my day with some protein or I end up hungry and cranky by mid-morning. Have you ever just had a donut for breakfast and an hour later you’re hungry and sleepy? And maybe a little cranky or sick? Yeah, that’s low blood sugar.
Things like donuts and bagels just spike your blood sugar and then soon after, it comes crashing down, making you feel pretty crummy. Try starting your day with some protein instead and I guarantee you’ll notice a huge difference in your energy and even your mood.
There’s nothing groundbreaking or even very creative about this. But I hope it serves as inspiration for you. Check your fridge, see what you have on hand, and make something happen.

Ingredients
This is totally subjective and the best part is that you can just use what you have.
For this recipe I used eggs, sausage, cheese and avocado.
Update: Since writing this post, I’ve gone totally dairy free. I am still on the lookout for a dairy free cheese that I like in my eggs, but Violife cheddar shreds are pretty good on top.
Making the Breakfast Scramble
Heat a nonstick skillet on low and add the sausage. Let them brown and turn them, browning them all around as much as you can.
Remove them from the pan and slice them up into bite size pieces.
Make sure the pan isn’t too hot and then add the beaten eggs and cheese of your choice. You might use a little cooking spray or clean out the browned bits from the sausage first.
Scramble the eggs around a bit and when they’re almost done, add the sausage back and toss everything around.
Serve with a little extra cheese on top and that delicious avocado! You can also add some salsa, fresh tomatoes, cilantro, whatever you like.
This is such a filling breakfast that keeps me full for hours. Enjoy!

- 3 eggs - beaten
- ⅓ cup shredded cheese - Violife dairy free cheddar shreds or regular fiesta blend cheese
- 5 Jimmy Dean fully cooked pork sausages
- 1 avocado - cut into bite size chunks
- salt and pepper to taste
Instructions
- Heat nonstick skillet on low.
- Add sausages and brown on all sides. Remove to cutting board.
- Cut sausages into bite size pieces.
- Add beaten eggs and cheese into the skillet and scramble.
- When the eggs are almost fully cooked, add the sausage and toss everything around until the eggs finish cooking.
- Serve with extra cheese and avocado or other desired toppings.
