Easy Breakfast Scramble

This easy breakfast scramble recipe with avocado and sausage is a good one to get you going in the morning. Protein helps stabilize blood sugar and gives you energy to start your day.

Ingredients
  

  • 3 eggs - beaten
  • cup shredded cheese - Violife dairy free cheddar shreds or regular fiesta blend cheese
  • 5 Jimmy Dean fully cooked pork sausages
  • 1 avocado - cut into bite size chunks
  • salt and pepper to taste

Instructions
 

  • Heat nonstick skillet on low.
  • Add sausages and brown on all sides. Remove to cutting board.
  • Cut sausages into bite size pieces.
  • Add beaten eggs and cheese into the skillet and scramble.
  • When the eggs are almost fully cooked, add the sausage and toss everything around until the eggs finish cooking.
  • Serve with extra cheese and avocado or other desired toppings.
