Easy Breakfast Scramble

This easy breakfast scramble recipe with avocado and sausage is a good one to get you going in the morning. Protein helps stabilize blood sugar and gives you energy to start your day.

- 3 eggs - beaten
- ⅓ cup shredded cheese - Violife dairy free cheddar shreds or regular fiesta blend cheese
- 5 Jimmy Dean fully cooked pork sausages
- 1 avocado - cut into bite size chunks
- salt and pepper to taste
Heat nonstick skillet on low.
Add sausages and brown on all sides. Remove to cutting board.
Cut sausages into bite size pieces.
Add beaten eggs and cheese into the skillet and scramble.
When the eggs are almost fully cooked, add the sausage and toss everything around until the eggs finish cooking.
Serve with extra cheese and avocado or other desired toppings.
