French Toast Casserole

This French Toast Casserole recipe has been a huge hit with my family. It’s definitely made its way into our regular breakfast rotation.
My favorite thing about this recipe is that I don’t have to stand in front of the stove for ages while I make individual slices of French toast.
This is one of those recipes that’s super quick to whip up and once you’ve done it a couple times, you’ll have it down.

Ingredient Notes
French Bread
I get my French bread from Walmart for around $1.30. It’s the whole uncut loaf from the bakery section. French bread should be made without dairy, but always check.
Dairy Free Milk
These days, I use oat milk for just about anything. The full fat Oatly works beautifully in this recipe because it resembles whole milk. You can use whatever you like. Even a low fat option like almond milk works well. I’ve tried that and it tastes delicious with a near identical outcome.
Vegan Butter
I use Earth Balance soy free in the red container. It’s salted so you don’t need to add salt to the maple syrup topping.

How to Assemble French Toast Casserole
Step 1: Preheat oven to 375° F. Grease a 9×13 baking dish (or similar size) with cooking spray or butter.
Step 2: Slice French bread into approximately 1 inch cubes.
Step 3: Add half the bread in an even layer to the baking dish.
Step 4: Sprinkle half the pecans over the top of the bread.
Step 5: Add the rest of the bread to the baking dish in a second layer. Then sprinkle on the remaining pecans.
Step 6: In a mixing bowl (preferably one with a spout like this batter bowl), whisk the eggs together. Add milk, sugar and cinnamon. Whisk well until all cinnamon clumps are broken up and everything is well combined.
Step 7: Very slowly, pour egg and milk mixture over the bread in the baking dish. Saturate as much of the dry bread with the mixture as you can, taking care not to spill it over the edges.
Step 8: In a small bowl, whisk together maple syrup, remaining cinnamon and melted butter.
Step 9: Slowly drizzle the maple syrup mixture evenly over the top of the bread.
Step 10: bake at 375° F for 30-40 minutes until top is golden brown. Store leftovers covered in the refrigerator for up to one week.

- 1 ½ cups dairy free milk
- ¼ cup granulated sugar
- ½ tsp ground cinnamon
- ¼ tsp salt

- ¼ cup vegan butter - melted
- 1 tsp ground cinnamon
Instructions
