French Toast Casserole

Breakfast is served! If you love French toast but hate how tedious it can be to serve up enough for a whole family, then this recipe for French Toast Casserole is for you.

Ingredients
  

For the Casserole

  • 8-10 cups French bread - cubed
  • ½ cup chopped pecans
  • 5 eggs
  • 1 ½ cups dairy free milk
  • ¼ cup granulated sugar
  • ½ tsp ground cinnamon
  • ¼ tsp salt

For the Topping

  • ¼ cup pure maple syrup
  • ¼ cup vegan butter - melted
  • 1 tsp ground cinnamon

Instructions
 

  • Preheat oven to 375° F. Grease 9x13 baking dish with cooking spray or butter.
  • Slice French bread into approximately 1 inch cubes.
  • Add half the bread in an even layer to the baking dish.
  • Sprinkle half the pecans over the top of the bread.
  • Add the rest of the bread to the baking dish in a second layer, then sprinkle the rest of the pecans over the top.
  • In a mixing bowl (preferably one with a spout like a batter bowl), whisk the eggs together. Add milk, sugar and cinnamon. Whisk until all cinnamon clumps are broken up and everything is well combined.
  • Very slowly, pour egg and milk mixture over the bread in the baking dish. Saturate as much of the dry bread with the mixture as you can, taking care not to spill it over the edges.
  • In a small bowl, whisk together maple syrup, melted butter and cinnamon.
  • Slowly drizzle the maple syrup mixture evenly over the top of the bread.
  • Bake at 375° F for 30-40 minutes until top is golden brown. Store leftovers covered in the refrigerator for up to one week.
