Tropical Fruit Salad with Pistachios and Honey Lemon Dressing
Fresh tropical fruit, crunchy pistachios and tangy, sweet honey and lemon. A beautiful and tasty fruit salad is the perfect compliment to so many meals. It makes a great picnic or potluck food, too.
Sometimes I have to test a recipe several times to get it just right. Other times, I nail it on the first try. This is one of those times. My husband and kids as my witness, if I’d been left alone with this bowl, I probably would have eaten every bite.
It’s just that darn good. The kiwi and pineapple add such a brightness and the sweet, ripe strawberries just scream summer. I added pistachios for crunch because I love mixing textures.
Just a tip, the honey lemon dressing that pools in the bottom could be mixed back in, but if you scoop up some pistachios with the dressing, it’s out-of-this-world good. You’re welcome.
Lastly, garnish with some mint leaves for a really fresh and dynamic flavor combo.

The fruit:
Kiwi, pineapple and strawberries go so well together. They’re bright, summery and so delicious. Cut them into bite size pieces, however you like.
Honey
I prefer to always use local honey for the health benefits, but you can use honey from anywhere. Just do your homework because not everything labeled honey in the grocery store is actually the real thing. Buying local honey ensures that it’s actually the good stuff.
Lemon Juice
Use a fresh lemon here. I know, I know, it’s easier to keep a bottle of lemon juice on hand, but it just doesn’t taste the same. Squeeze a bit for your salad and then use the rest for a cocktail. It’s a win-win.
Tips for this recipe:
Be sure to serve this fresh. It won’t be hard to polish off the entire bowl, but just be aware that it doesn’t keep well over night.
Tropical Fruit Salad with Pistachios and Honey Lemon Dressing

- 3 kiwis - peeled and cut into bite size pieces
- 1 cup pineapple - fresh, cut into bite size pieces
- 1 cup strawberries - cored and quartered
- ¼ cup pistachios - shelled and roughly chopped
- 2 tbsp honey
- 1 tsp lemon juice
- mint leaves - just a few for garnish
Instructions
- Cut all the fruit and toss together in a serving bowl.
- Roughly chop pistachios and sprinkle on top of the fruit.
- Mix together honey and lemon juice until well combined. Poor over fruit and nuts.
- Gently toss everything together, careful not to smash the fruit.
- Garnish with mint leaves and serve immediately.
