Dairy Free Ice Cream Sandwiches

Not only do these ice cream sandwiches look impressive, but they’re dairy free too! That’s right, NO DAIRY!

Ingredients
  

  • 8 dairy free chocolate chip cookies
  • 1 pint dairy free vanilla ice cream
  • sprinkles, crushed oreos, shredded coconut or mini chocolate chips - for decoration

Instructions
 

  • Prepare Dairy Free Chocolate Chip Cookies and let them cool completely.
  • On small plates, spread sprinkes, coconut, etc. for decoration.
  • Take one cookie and turn it upside down.
  • Scoop a small ball of ice cream and press it flat on the underside of one cookie.
  • Press the bottom of another cookie on top of the ice cream.
  • Roll the edges of the ice cream sandwich in the topping and then shake/knock off any excess.
  • Place in freezer for 5-10 minutes to firm up before serving and to keep from melting while assembling the rest.
  • Serve immediately. Store in the freezer.

Notes

You can store leftovers in the freezer, but they aren't as good.
