Chocolate Peanut Butter Baked Oatmeal

I love a make-ahead breakfast. This chocolate peanut butter baked oatmeal is rich but not too sweet. With chocolate chips and fresh raspberries on top, it tastes sinful but it isn't!

Ingredients
  

  • 1 ½ cups old fashioned oats
  • ½ cup all purpose flour
  • cup sugar
  • ¼ cup cocoa powder
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 ½ cups almond milk - or other milk of your choice
  • 1 tbsp vanilla extract
  • 2 eggs
  • cup peanut butter

Instructions
 

  • Preheat oven to 350° F and spray a 9x9
  • In a large mixing bowl, combine oats, flour, sugar, cocoa powder, baking powder and salt. Set aside.
  • In a separate bowl, whisk together almond milk, vanilla extract, eggs and peanut butter.
  • Add wet ingredients to dry ingredients and mix well.
  • Pour mixture into prepared baking dish and bake for 30-35 minutes until toothpick inserted in center comes out clean.
  • Serve warm or let it cool completely, then cover and store in the refrigerator.
