Vanilla Almond Baked Oatmeal

This baked oatmeal recipe is a really cool one. It's delicious all by itself but it's super basic so you can add anything you like. Dried fruit, nuts, spices or chocolate chips would work great.

Ingredients
  

  • 1 ½ cups old fashioned oats
  • ½ cup all purpose flour
  • ¼ cup sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 ½ cup almond milk
  • 1 tbsp vanilla extract
  • 2 eggs
  • ¼ cup almond butter - softened

Instructions
 

  • Preheat oven to 350° F.
  • Grease 9x9 baking dish with butter or cooking spray.
  • In a large mixing bowl, combine oats, flour, sugar, baking powder and salt. Set aside.
  • In a separate bowl, whisk together almond milk, vanilla extract, eggs and almond butter.
  • Pour wet ingredients into dry ingredients and mix well.
  • Pour mixture into prepared baking dish and use a spoon or rubber spatula to make dure oats are distributed evenly throughout the dish.
  • Bake for 25-30 minutes until toothpick inserted in the center comes out clean and edges are just slightly starting to brown.
  • Serve warm and top with anything you like such as nuts or melted almond butter.
