Ice cream sandwiches are an exciting and delicious treat for kids and adults alike. Not only do these ice cream sandwiches look impressive, but they’re dairy free too! That’s right, NO DAIRY!
My lucky ducky husband is the only one in our house who can eat dairy. Our boys and I have to stay away from it, so I’ve gotten pretty good at finding alternatives for things.
These are so easy to make and such a delectable treat.

For the Cookies
Here’s my amazing recipe for the yummiest dairy free chocolate chip cookies. You can use any kind of dairy free cookie you want, but you won’t go wrong with these. Make them. Just do it.
Chewy, buttery cookies with warm, melted chocolate in every bite. Offer these Dairy Free Chocolate Chip Cookies to anyone and I guarantee, they won’t have a clue that they’re not full of butter.
This is my favorite dairy free vanilla ice cream. Its creaminess can win out against any cow’s milk ice cream out there. It does have a coconut flavor, so if that’s not your jam, opt for a different one. I love coconut so I don’t mind at all.
Dairy Free Ice Cream Sandwiches

- 8 dairy free chocolate chip cookies
- 1 pint dairy free vanilla ice cream
- sprinkles, crushed oreos, shredded coconut or mini chocolate chips - for decoration
Instructions
- Prepare Dairy Free Chocolate Chip Cookies and let them cool completely.
- On small plates, spread sprinkes, coconut, etc. for decoration.
- Take one cookie and turn it upside down.
- Scoop a small ball of ice cream and press it flat on the underside of one cookie.
- Press the bottom of another cookie on top of the ice cream.
- Roll the edges of the ice cream sandwich in the topping and then shake/knock off any excess.
- Place in freezer for 5-10 minutes to firm up before serving and to keep from melting while assembling the rest.
- Serve immediately. Store in the freezer.
