Creamy Pineapple Avocado Smoothie

Fresh pineapple and ripe avocado whip up to make such a creamy and light smoothie. It’s healthy, sweet, fluffy and so delicious. Perfect with breakfast or anytime of day.

I want this every day. It’s so creamy and there’s actually no cream or dairy of any kind! What’s the secret? Avocado. When you put avocado in a blender, it whips up so creamy and smooth. Heaven.

My kids, despite their exposure to a wide variety of fruits and vegetables, are pretty typical kids. They refuse to even touch a lot of things that are healthy for them. Avocados, for example, are full of healthy fat that helps their rapidly growing little brains. 

Now, I like to keep offering things to them so that these fruits and veggies don’t become a mystery to them, but I’m not above hiding something healthy in something yummy. I’ve got to get some nutrients in these guys somehow. 

Smoothies are my favorite way to do just that. They’re quick and I can put so many healthy ingredients in a smoothie and make it taste really good. They don’t know the difference!

Ingredients

Pineapple

Fresh pineapple works best for this recipe, but I understand not everyone has fresh pineapple on hand all the time. I certainly don’t. You can also use frozen pineapple. If you do, just pop it into the microwave for a few seconds. Watch it closely. You don’t want it to actually get warm. Of course, you can always let it thaw naturally in the fridge or on the counter for a little bit.

If you’re making a big breakfast, just take it out of the freezer first thing and by the time you’re ready to make the smoothie (ideally right before you sit down to eat), it should be ready to go.

Avocado

Isn’t it glorious when you get a perfectly ripe avocado with no brown spots? It’s like winning the produce lottery. If your avocado has a bit of brown or isn’t the prettiest, that’s totally okay. Cut away anything that looks undesirable and just use the rest. As long as most of the avocado is still good, it will be fine.

Making the Smoothie

You can’t mess this up. The only thing to keep in mind is, if your pineapple is a little frozen still, you’ll want to add it to the blender last. That will make sure the blades don’t get bogged down.

If you want a blender that can handle anything, get a Vitamix. I’ve had mine for a few years and it’s seriously so impressive. It’s never let me down. Check out some YouTube videos and see what all it can do. I’m here to say yes, it really can.

Equipment

  • Blender

Ingredients
  

  • 16 ounces fresh pineapple - or frozen, thawed
  • 1 ripe avocado - pitted and flesh scooped out
  • 1 cup water

Instructions
 

  • Add pineapple, avocado and water to the blender.
  • Blend on high for a few seconds until smooth. It won't take long if pineapple isn't frozen.
  • Serve immediately. Avocado will oxydize so this should be enjoyed right away.
